Makes 12 servings
2 onions thinly sliced
1 ½ cups diced green and red peppers
2 cups Swiss cheese
2 ½ cups frozen loose pack hash brown potatoes
1 cup Bisquick mix
2 cups milk
1/8 tsp pepper
5 eggs
Heat oven to 400. Spray 13×9 pan.
Layer onions, peppers, potatoes and cheese in baking dish.
Stir remaining ingredients in large bowl until blended.
Pour over ingredients in baking dish.
Bake uncovered 35-40 minutes or until knife comes out clean.
Cool 5 minutes.
Can be made up the night before and refrigerated. If you do this bake at 400 for about 1 hour.
